I used to think healthy foods were a complete bore! And that they didn’t taste great. But that’s really not true.

Savory Lentil Pancakes: Healthy Harvest Recipes 

This is one of the best Healthy Harvest Recipes you can try out if you are in the mood for a healthy and savory breakfast by Amy Wansing.

Of course, you can try it for both lunch and dinner too! But I like to use this recipe for making my breakfast.

Let’s get started!

  • Obviously, you need to start gathering the ingredients before you can start making this dish. So here it goes, red lentils (without the hard pieces), chopped parsley, diced medium onion, cloves of garlic, ground flax seed with a bit of water or an egg, yeast, black olives, almond flour, rice flour, paprika, turmeric, ground pepper, salt, and olive oil.
  • If you haven’t already mixed the flaxseed with water, you should do it now. Just put the mixture in a bowl and keep it there to thicken for 5 minutes.
  • Take your lentils and pour water into them under a stove. Let that boil for about fifteen minutes till you take it out of the heat.
  • Start straining the water out of the lentils and mash them in a big bowl using a fork.
  • Now add the other ingredients to the bowl, except for the oil, and mix till it gets sticky enough so you can shape it.
  • You can try adding a bit more of the almond flour to get the dough-like consistency.
  • Now add the oil to a pan and flatten a ball of the dough into a pancake-like shape and fry for two minutes.
  • And now you can serve and enjoy.

Balsamic Glazed Brussel Sprouts with Pecans: Healthy Harvest Recipes 

This is another one of Amy Wansing’s recipes that I really enjoy. It’s very easy to make and as healthy as it is tasty.

Even though this dish is not enough to satiate your hunger properly, it is one of the tastiest side dishes you can try out.

Let’s get to it!

  • For this recipe, you will need Brussels sprouts (fresh), balsamic vinegar, pecans (of course), olive oil, salt, and pepper.
  • You have to wash your Brussels sprouts as cleanly as possible. And don’t forget to trim out the ends and any other wilted or brown leaves.
  • Take the large Brussels sprouts and cut them in half.  Put them all on baking sheets while coating them with some extra virgin olive oil. Add enough salt and pepper.
  • If you have kept your oven preheated to 350 degrees, you can now bake the sprouts for 50 to 60 minutes.
  • A couple of minutes before taking them out of the oven, toast your pecans on low heat.
  • Now you can take out the sprouts and serve them with the toasted pecans and some balsamic vinegar.
  • The trick is to drizzle some syrupy balsamic vinegar that has aged well when you serve your dish to your guests. Bon appetit!
